A light dessert that is also nutritious is hard to find. This recipe is reminiscent of a classic apple pie but eliminates the added fat and sugar content that is unhealthy. Instead, use your favorite sugar substitute and enjoy the natural sweetness of a baked apple.

What is the best apple for apple pie bites?

While I have made these with a variety of apples, ultimately the best option is a Granny Smith apple. Not only does it offer a more nutritious base for dessert, but it holds up well to the baking process.

Some apple varieties will be sweeter and require no added sugar. The thing to remember when using a different apple is that they are often mushy once cooked. For this recipe, you want a soft apple after baking, but you want it to retain some of the shape so it doesn’t fall apart.

How to core an apple

For this recipe, you want your apples to be cut in half and cored. Removing the seeds and hard membrane around them is a must. Begin by cutting the apple in half, then use a small paring knife or a melon baller to scoop out the center of the apple.

You may also wish to invest in an apple corer for use if you plan to make this regularly. One straight push down the center of the apple will remove the seeds so all you have to do is slice the apple in half.

Can these apple pie bites be frozen?

Yes! One of my favorite things to do when I have free time on a weekend is to prepare food in advance for future meals. I’ve created meal plans in the past that help keeps me on track, but sometimes it’s that last-minute treat that will throw me off course. You can easily make a large batch of these apple pie bites and then freeze them to reheat in the future.

Bag and label them with the recipe name and date prior to freezing. You can thaw by placing in the refrigerator 24 hours before you wish to eat them, then reheat in the microwave. You can also place them directly from the freezer to the oven, or defrost in the microwave using the defrost setting before heating in the oven.

Description

This Easy Apple Pie Bites Recipe is a perfect way to take a simple apple and turn it into a healthy version of a classic American apple pie!

Ingredients

Scale

  • 3 organic apples (we used organic Honeycrisp and organic Granny Smith)
  • 2 Tbsp coconut oil, melted
  • 1/2 cup quick cooking oats
  • 1 Tbsp oat flour
  • 1/3 cup Xyiltol (or sweetener of your choice)
  • Cinnamon, to taste

Instructions

  1. Preheat oven to 350 degrees
  2. Cut apples in half and core the apples
  3. Mix all dry ingredients together and then add melted coconut oil
  4. Stuff the apples with the oat mixture
  5. Bake for 30 minutes

Notes

If you use Xyiltol, keep it away from your pets as it is toxic to them!
