Recipe: Air Fryer Truffle Fries (3)

I miss eating out. It was one of my greatest joys, something I loved to do even though it was sometimes for work and, recently, I’ve found myself missing foods you only really get when you eat out, which at the time I thought were a bit cliche and now seem like a special treat.

As I have already mentioned, one of my most used kitchen ‘gadgets’ that I use the most, even more so than the slow cooker is my air fryer. Yes you can make thinks like my Air Fryer Korean Fried Chicken Wings in there, but day to day I love it because you can use it to make frozen chips (French Fries, sweet potato fries, curly chips, chunky steakhouse chips, even LEON waffle fries from the Sainsbury’s frozen section) taste like restaurant chips. And how awesome is that?

So, I thought I’d figure out how to use the air fryer to make the perfect restaurant-style truffle fries.

Now, it turns out that not one, but two truffle-infused products are the key to making the perfect truffle fries in the air fryer. The first is obvious: truffle oil. Different brands will provide differing results, but I can tell you if you have a Pomora subscription (mine is gifted) their truffle oil is perfect here, as is Maison de la Truffe’s White Truffle Oil (#ad / gifted). As a general rule, white truffle oil is better than black here as it is the most pungent. I know usually you don’t need to add any oil to chips before putting them in the air fryer, but we’re building flavour here!

The second ingredient that will really take your truffle fries to the next level is infused truffle salt. Okay yes I know, it sounds posh and fancy… and it is, but honestly you won’t regret investing in a jar. Not only will you be able to make endless batches of these fries, but you’re breakfast eggs will be changed forever: I no longer season my scrambled eggs and sprinkle them with truffle salt afterwards, and I always have it on hand to season spoonfuls when I’m eating a soft boiled egg and soldiers. My (gifted) jar is also from Maison de la Truffe #ad, but once it is back in stock Sous Chef also stock a good one.

Description

These easy restaurant-style Truffle Fries with parsley and parmesan take just 20 minutes to make in the air fryer.

Ingredients

Scale

  • 225g (8 oz) frozen French fries
  • 1 tsp truffle oil (see note)
  • 1 tsp finely chopped parsley or 1/2 tsp fresh rosemary
  • 1/2 tsp truffle salt
  • parmesan (make sure this is vegetarian if this matters to you!)

Instructions

  1. Toss the frozen French fries together in a large bowl together with the truffle oil. Transfer to the air fryer and cook on the chip setting – this usually takes around 20 minutes – tossing occasionally. Meanwhile, prepare the fresh herbs.
  2. Immediately they have finished cooking, toss together then French fries with the salt and the herbs. Transfer to a serving bowl or dish and finely grate over a generous amount of parmesan.

Notes

Try to use a while truffle oil which will provide a stronger flavour than black truffle oil.
