If you're looking for the perfect sandwich, look no further than this recipe for the best sandwich ever. A super flavorful cheese is paired with additive-free breads and lots of wonderful toppings for a delightful lunch.

What Makes A Perfect Sandwich?

Really, Alicia? A sandwich? Does this even require a recipe? I debated posting this for a long time because I never see other food bloggers posting about sandwiches. Perhaps avocado toast with lots of flowers and moon dust on top, but definitely not a chicken sandwich. But I am not a regular (migraine safe) food blogger, I'm a cool food blogger.

I realized about a week ago this has been my go to lunch for the past month. I had eaten it every day for a week and never tired of it. That, my friends, is huge for someone who can't stand leftovers.

Sandwiches are truly a staple for a migraine diet. They're quick, easy, and delicious, without requiring a ton of effort or thought. So how does one make it migraine safe?

Ingredients for an Additive-Free Sandwich

  1. Let's start with the bread. I can usually find a good migraine safe bread at my local bakery, but if you don't have one close to you try looking at Pepperidge Farm's Wheat Bread or Dave's Killer Bread. Manna Bread is another wonderful and very clean brand.
  2. For my gluten free friends, Free Bread is a good brand, but does contain xanthan gum so be aware if you're sensitive to gums. Also Against the Grain has Original Rolls with very minimal ingredients! Don't forget about corn tortillas too. For my Dallas friends, try Unrefined Bakery. They do contain apple cider vinegar and xanthan gum, but I find it's too small an amount to cause an issue for me.
  3. The chicken. If you're not making this an all veggie sandwich, consider roasting a chicken on Sunday and using the leftovers for your sandwiches throughout the week. If this isn't an option, try a "naked" rotisserie chicken from Whole Foods.
  4. All kinds of veggies. I'll occasionally leave out the chicken for a vegetarian sandwich, and it's still so delicious. These homemade roasted red peppers are worth the extra effort.
  5. The secret ingredient. Although I do love my Sir Kensington's Organic Mayo, some people might be wary of even the smallest amounts of lemon juice. Enter Boursin! This garlic and herb spread packs a ton of flavor into your sandwich without the worry of citrus or aged cheese.

There you have it. Perhaps not the most inspired dish I've ever made, but certainly one of the easiest and most delicious. Top it off with some Boulder Canyon Olive Oil Chips.

Ingredients

  • 2 slices your favorite bread or tortilla
  • ½ cup "naked" rotisserie chicken, meat shredded *homemade or "naked"
  • 1 tablespoon boursin garlic and herb cheese
  • a few fresh basil leaves
  • 1 cucumber
  • 1 roasted red peppers
  • 1 lettuce
  • fresh cracked black pepper

Instructions

  • Spread Boursin cheese on your bread of choice and then add basil leaves to each side. Top with chicken and vegetables.

  • For a vegetarian option - leave off the chicken (duh) and add chopped carrots and/or sliced zucchini.

    You mentioned 'Boulder Canyon Olive Oil Chips'. I don't know if they contain salt. If so, be careful because sodium is definitely not good for folks who suffer from vestibular disorder.

      Hi Marie, It's really important to avoid sodium for meniere's disease. However, this suggestion is for those on a migraine diet. While I agree it's necessary to watch your sodium intake in general, it's allowable for this particular diet.
