A whole food plant-based diet is based on foods derived from, you guessed it, plants. Lots of them. Piled high on your plate. What does that really mean? It means eating a wide range of unprocessed, or minimally processed vegetables, grains, fruits, nuts, and seeds. And it’s not as limiting as it sounds.

Plant-based diets focus on real food, whole ingredients, a spectrum of colors, and omitting animal products. There are many compelling studies that argue the benefits of this type of diet on both our health, and the health of the environment.

Try incorporating more of these type of meals into your everyday. The key to success is good recipes. So! If you’re looking for great plant-based recipes, I’m including all of my favorites here. Try swapping out a conventional taco night for this plant-based taco soup, making these quick vegan enchiladas, or this crowd-pleasing chana masala!

Big Sur Bakery Hide Bread

From the Big Sur Bakery cookbook, a seed-packed pocket bread recipe contributed by a good friend of the bakery. Sesame, sunflower, flax and poppy seeds, quinoa and oat bran impressively cram themselves into these delicious, hearty rolls.

Green Curry Porridge

A green curry porridge to keep you cozy as the weather changes season. This is a great way to use up winter squash and any herbs you have on hand. Rice and coconut milk form the base, and you get a kiss of spicy from serrano chile.

Peanut Butter Granola

Using a short ingredient list of pantry basics, this peanut butter granola is incredibly good. It features a peanut butter and maple syrup coating that bakes beautifully into crunchy oat clusters.

Otsu

You have to try this one! Soba noodles are tossed with a fiery ginger-sesame dressing and a generous amount of cucumbers, scallions, and pan-seared tofu. For over twenty years this has been a desert island recipe in our house.

Roasted Cherry Tomatoes

Keep these on hand to dial up all your favorite meals. They are intensely flavorful roasted cherry tomatoes. Made by roasting in a hot oven with olive oil, salt, and a bit of brown sugar. So simple to make and so good!

Better Breakfast Cereal

This is going to make your mornings better. Combine entire boxes of healthful cereal into your biggest bowl, add extra oats, oat bran, ground flax seeds, and freeze-dried berries. Now you have plenty of breakfasts ready to go.

Heather’s Quinoa

A one-skillet quinoa recipe - quinoa, corn, chopped kale and pan-toasted tofu tossed with a big dollop of pesto and finished off with a few roasted cherry tomatoes.

Turmeric Chickpeas with Garlic Tahini

A quick lunch. And a compelling reason to always keep turmeric chickpeas on hand!

Green Bean Salad with Peaches

This green bean salad with peaches can anchor many summer meals. It features caramelized onions, toasted nuts, dates, a jolt of serrano pepper and a unifying oregano-garlic drizzle.

Shaved Fennel Salad

This could very well be my favorite salad recipe from Super Natural Every Day - shaved fennel, arugula, zucchini coins, feta, toasted almonds.
